Title: Wisconsin Cheese Log

FROM JONI'S KITCHEN
4ozCheddar cheese; sharp, shred
1/3cRicotta cheese;part skim
1tb+ 1 tsp Dry White Wine
1/4tsLemon Herb Blend
  Garlic Powder to taste
  Onion Powder to taste
  Salt substitute to taste
1/4cParsley;fresh chopped

In blender or food processor, combine cheeses, LEMON HERB BLEND, wine, garlic powder, onion powder, salt substitute and process until smooth. In the center of a sheet of plastic wrap, sprinkle 2 tablespoons parsley, and then spoon the cheese mixture over the parsley in a line. Now sprinkle remaining 2 tablespoon of parsley over the cheese, and enclose the cheese in wrap, forming a log about 6 inches long by 2 inches wide. transfer to the freezer and let freeze for about 20 minutes; turn log over and freeze until firm, 10 to 25 minutes longer. To Serve, remove plastic wrap and surround with Melba rounds. Per Serving: 80 calories; 6 g fat; 101 mg sodium; 18 mg cholesterol Source: Skinny Spices by Erica Levy Klein
